Chicken in Fricassea
Ingredients: 1 chicken, 100 gr. butter, 10 gr. flour, 0.4 l.
hot water, 4 egg yolks, 1 lemon, a bunch of celery, basil, parsley
and onion, a carrot, dry mushrooms, salt and white pepper.
How to do it :
Put 50 gr. of butter in a stewpan. When it liquefies, make a béchamel
out of it, adding the flour and turning. Put in the hot water.
Add the bunches of celery, basil (no leaves), parsley, onion and
carrot. When it boils again put in the chicken (previously cut
in pieces) and other 50 gr. of butter, add salt and white pepper.
Cover and let it boil slowly.
After 40/45 minutes take out the bunches and add dry mushrooms
(previously dipped in hot water).
When it is cooked (another 15 minutes), turn off the fire and
add egg yolks whisked with lemon juice.
Carciofi in tegame
Ingredients: artichokes oil garlic parsley salt pepper
How to do it:
Wash the artichokes and make them into segments
Put them in a pot with oil ,garlic ,mining parsley ,salt and pepper.
Cover the pot and let them cook at a medium temperature
Cake of the Moro
Ingredients: 100 gr of butter 2 hot espresso cups 200 gr of sugar
300 gr of minced thinly almonds 100 gr of chocolate dust 4 yolks
4 whirled white eggs
How to do it: Mix the butter the sugar and the coffee in a jar.
Add the yolks, the almonds, the chocolate dust and the whirled
white eggs. Butter a baking tin and put inside the mixture. Turn
on the oven and wait for 45 minutes since it is 180 degrees.
